Hulling and Washing
Once the walnuts arrive at the company facilities, an initial selection process takes place to remove any residues such as branches, soil, and stones.
The walnuts are then hulled using a dedicated machine that removes the husk — the green outer covering that may still remain attached to the shell.
At this stage, the hulled walnuts proceed to the washing phase, carried out exclusively with water, without the addition of any whitening agents or chemical products, in order to preserve the natural characteristics of the product.
During these operations, the walnuts move along conveyor belts where the first manual selection takes place, allowing unsuitable products to be removed.
Drying and Grading
After the hulling and washing process, the walnuts are placed in special containers and transferred to the drying facility, equipped with dryers operating at controlled temperatures never exceeding 30°C.
This delicate process is essential to ensure the quality of the final product. Walnuts with an initial moisture content of around 40% are gradually dried until they reach a final moisture level of approximately 10%, ideal for packaging and long-term storage.
Once drying is completed, the walnuts undergo grading through air-flow selection systems. Based on their specific weight, unsuitable walnuts — such as empty shells or walnuts with partially shriveled kernels — are discarded, while the remaining walnuts are classified according to size and then stored.
Selection and Packaging
At Agricorti, processing does not rely solely on mechanical selection. Visual inspection remains essential: the final decision regarding which walnuts are suitable for packaging is entrusted to the trained eye and experience of walnut specialists.
The stored walnuts are placed on a conveyor belt where qualified staff manually remove broken or defective walnuts.
Once the selection process is complete, the walnuts undergo a careful quality control inspection before moving on to the packaging stage. At this point, the walnuts are ready to be marketed.
Once again, this demonstrates how technology alone cannot guarantee the level of quality that the care, attention, and experience of skilled farmers are able to provide.
