Chicken roulades with pears, gorgonzola and walnuts

This quick and easy recipe will show you how to make delicious chicken roulades with an indulgent centre of walnuts, pears and creamy gorgonzola.
Ingredients
16 slices of chicken breast • 16 slices of cooked ham • 2-3 pears • 150 g gorgonzola • 60 g walnut kernels • 30 g butter • 2 sprigs of marjoram • 1 tuft of parsley • 1 glass of white wine • extra virgin olive oil as required • flour as required • stock as required • salt to taste • pepper to taste
Instructions
Put the walnut kernels into a mixer, keeping some whole ones to one side for decoration. Add the washed and patted dry marjoram and parsley leaves. Roughly chop everything.
Cut the pears into 4 wedges, peel them and then slice them into 16 thin little wedges.
Put the sliced chicken onto a worktop and place a slice of cooked ham cut to measure onto each piece of chicken, leaving 1 cm free from the edge.
Mix the gorgonzola with the chopped walnut mixture, then put a tablespoon onto each slice along with a little wedge of pear. Roll them up and fasten them with cocktail sticks.
Dust the roulades with flour and brown them in a pan with the butter and a drizzle of oil for about 2 minutes. Turn them over, add salt and pepper to taste and then finish browning them.
Simmer them with white wine and keep cooking for another 5 minutes, adding a little hot stock if the cooking juices dry up too much.
Once cooked, remove the cocktail sticks and decorate with parsley, marjoram and the half walnut kernels that you kept to one side.
Filter the cooking juices and serve them with the roulades.
