Walnut tart

This walnut tart is the perfect sweet treat to serve on many different occasions: whether for breakfast, a snack or dessert, it will always entice everyone for a piece. Its texture, aroma and flavour are absolutely amazing!

Ingredients

For the shortcrust pastry: 300 g flour • 150 g icing sugar • 150 g butter • 3 egg yolks • a pinch of salt

For the cream filling: 150 g walnuts • 100 g caster sugar • 6 egg whites • 3 small glasses of milk • 3 tablespoons of flour • 4 tablespoons of sugar • 2 egg yolks

Instructions

Make the shortcrust pastry as usual, i.e. by quickly kneading the flour with the butter, sugar, egg yolks and a pinch of salt.

Knead the shortcrust pastry just as much is needed to make a smooth dough, then shape it into a ball, wrap it in cling film and put it in the fridge for at least 30 minutes.

In the meantime, beat the egg whites until stiff while gradually adding the icing sugar.

Mix in the egg yolks, flour, caster sugar, milk and, finally, the walnut kernels.

Take the shortcrust pastry out of the fridge, quickly knead it again on the worktop lightly dusted with flour to make it easier to shape.

Roll out the shortcrust pastry into a disc about 1-2 cm thick and use it to line a greased and floured mould 24 cm in diameter.

Pour the walnut mixture into the shortcrust pastry casing.

Preheat an oven to 180°C and bake the tart for about 40 minutes.

Take it out of the oven, leave it to cool down and then remove it from the mould.

Once it has cooled down, serve your walnut tart with a sprinkling of icing sugar.
