These turkey and walnut cutlets are a fun main course, the ideal alternative to the classic pan-fried escalope.

4 turkey steaks · 2 eggs · 50 g butter · olive oil · 350 g walnuts · a handful of breadcrumbs · salt and pepper
Chop the walnuts and mix with the breadcrumbs. Beat the eggs with a little salt and pepper, and brush over the turkey steaks. Now dip the steaks in the chopped nuts and bread crumbs.
Heat a little butter and oil in a frying pan, and gently place the cutlets in the pan to brown. Serve hot from the pan.
